Chocolate Molten Brownies

Not exactly a brownie but not exactly molten cake either… Chocolate Molten Brownies!

Have you ever come up with a recipe and thought, “Wow, I can’t believe I created that”? THIS recipe is that for me. It is literally one of the best desserts I’ve ever had and the best part is it’s healthy (in terms of dessert anyway)! If you love chocolate and hot, gooey brownies, this recipe is for you. Note-I always use Organic ingredients when possible.

 

RECIPE:

(~4 servings)

INGREDIENTS:

1 Cup Almond flour (fine-ground)

1/2 Cup Spelt Flour (sprouted)

1/2 Cup + 2 Tablespoons Cocoa Powder

1/2 teaspoon Baking Soda

3/4 teaspoon Celtic Salt

2 Tablespoons Coconut Sugar

1 stick Organic Butter

2 large, pastured Eggs (whisked)

1/4 Cup raw Honey

1 Tablespoon Vanilla Extract

4 drops of liquid Stevia

1/3 Cup dark chocolate, chocolate chips (I like Guittard 63%)

 

INSTRUCTIONS:

Preheat oven to 350 degrees F.

In a large saucepan, melt butter. Remove from heat and let cool. Once cooled, add wet ingredients and stir until well-mixed.

In a medium bowl, combine dry ingredients except chocolate chips.

Add dry ingredients to the wet mixture gradually. Be careful to not overmix.

Fold in chocolate chips.

Pour the batter into an 8×8 baking dish (I actually prefer a round dish. Do not use a 9×9 dish or your brownies may overcook) and use a spatula to smooth the top. Bake for 13-15 minutes. NOTE: the center of the brownies will be gooey!

Serve hot with organic vanilla ice cream for complete ecstacy!
